Vegetable Croquettes: A Healthy Dish
Vegetable Croquettes
Ingredients:
- 1/2 cup of milk
- 1 cup of flour
- 1 onion
- 1 pepper
- 1 carrot
- 1 zucchini
- 2 garlic cloves
- 100g spinach
- 100g cheese or tofu
- bread crumbs
Procedure:
- Chop the onions and the garlic cloves delicately and put them in a pan with a bit of oil.
- Chop the carrot, the pepper and the zucchini into small pieces and add them to the pan.
- Season and cook everything together for about 5 minutes.
- Clean the spinach and remove hard stems.
- Chop them up, mix them up with the previous ingredients and cook briefly.
- Add the milk to the flower (if vegan use vegetable milk or broth) little by little continuously stirring the mix.
- Add two pinches of salt and pepper and cook the dough with low heat for 15 minutes.
- Cover the surface of a wide platter with a very thin layer of oil and let it cool.
- Lay the dough over it.
- Grate the cheese or the tofu (for vegans) on top of the dough and mix well.
- Shape the croquettes to the desired length and width.
- Roll the croquettes over batter eggs and bread crumbs.
- Pre-heat the over to 350 degrees.
- Cook in the oven until golden. Make sure that you place the croquettes in a thin oiled up film.
